Our West Highland Beef is exceptionally tender and deliciously flavorful, while having a similar cholesterol percentage to venison. It is leaner than USDA grade “Choice.” In a study by the Scottish Ag College, the beef was shown to be higher in protein and iron than other beef breeds. The West Highland Breed was originally developed in the cold highlands of Scotland. These cattle developed a heavy coat, and subsequently don’t need to pack a lot of fat onto their carcass, which makes them leaner and allows their fat to be incorporated into the meat. Katahdin Sheep are an American Heritage Breed known as hair sheep. They lose their hair each spring, no shearing needed! They are extremely docile and easily handled.
